This time I am here with my childhood favourite recipe i.e. Aloo halwa or potato halwa. Potato halwa is perfect dessert recipe for fasting . This is very easy halwa recipe which can be made with boiled potatoes and few more ingredients. The star ingredient of this recipe is potatoes . The best thing about potato is whatever way we cook potatoes , it tastes awesome.

During fasting , we usually eat food made with potatoes, sweet potatoes, singhara atta, kuttu atta and sago etc. Potato is most popularly used during fast because it offers good amount of carbohydrate.
Potato halwa is a very simple recipe that anyone can cook in a jiffy with few ingredients.

Ingredients
- Boiled potatoes 6-8 medium
- Desi ghee or clarified butter 3-4 tbs
- Sugar 1/2 cup or as required
- Dry fruits or nuts of your choice 2 tbs
Method
- In this recipe , I am using almonds and raisins. Chop almonds lengthwise and keep it aside.
- Peel boiled potatoes and mash with hand or potato masher so that there should be no lump .
- Heat a pan or kadai . Add 1 tbs ghee in pan or kadai. Keep 1 tbs chopped almonds separately for garnishing.
- Add remaining almonds and raisins into ghee. Sauté almonds and raisins for few seconds on low heat.
- Once almonds and raisins looks nicely toasted , remove from ghee.
- In same pan or kadai , add more 2-3 tbs ghee .
- Once ghee is hot , add mashed potatoes into ghee.
- Mix the mashed potatoes and ghee together.
- Sauté the potatoes with ghee for 5 min on low heat.
- After 5 min , add sugar and again mix it very well.
- After adding sugar , the sugar and potato mixture would like thick batter.
- Add shallow fried almonds and raisins .
- Keep stirring and sauté halwa on low medium heat.
- As we cook the halwa , the colours of halwa will start changing .
- So we sauté halwa until it gets nice golden colour and it starts leaving the pan. This process will take almost 15-20 min .
- Potato halwa or pudding is ready to serve hot.
