Balushahi Recipe | Badusha Recipe | How to make Balushahi or Badusha

Balushahi or Badusha is a one of the traditional and popular Indian sweet. Balushahi is made with all purpose flour and later glazed with sugar syrup. Balushahi has crispy from outside and soft , flaky texture from inside. Balushahi is one of my favorite sweet to prepare on Diwali. Making Balushahi or Badusha is very easy if you use correct ratio of ingredients and follow the process .We can store Balushahi at room temperature for about one week.

Ingredients

  • All purpose flour or Maida 1 cup
  • Ghee  1/4 cup
  • Curd or Yoghurt 2 tbs
  • Baking Soda 1/4 tsp
  • Sugar 1 cup
  • Water 1 cup
  • Cardamom powder a pinch
  • Pistachios chopped for garnishing

Method

Preparing dough

  • Take all purpose flour or maida in a bowl.
  • Add baking soda into the bowl and mix well.
  • Add ghee into the bowl and mix it together by rubbing with fingers.
  • Add yoghurt and mix well.
  • If you need , add 1 tbs of water and mix to bring everything together . In this recipe we should not knead the dough.
  • Cover the dough and keep it aside for 30 minutes.

Preparing sugar syrup

  • In a saucepan add sugar and water. Mix well and allow it to boil.
  • Meanwhile , add cardamom powder and mix.
  • Allow the sugar syrup to boil on medium heat until you get almost single thread consistency. It will take 5-10 minutes.
  • Keep the sugar syrup aside .

Making Balushahi

  • Divide the dough into equal portions.
  • Take one portion and make a ball shape.
  • Make a hole in the center of dough ball.
  • Prepare all the balushahis in the same way.
  • Heat oil in a pan on low heat. The oil should not be very hot. If oil will be very hot , balushahi will not get cooked from inside.
  • Place balushahi in oil and fry on low heat.
  • As balushahi starts floating , flip them over and fry on low heat until it gets golden color.
  • Remove balushahi from oil on a paper towel.
  • Dip fried balushahi in warm sugar syrup. Leave balushahi in sugar syrup for 1 or 2 minute.
  • Remove balushahi from syrup and garnish with chopped pistachios.
  • Balushahi or Badusha is ready to serve.
