Kheksi fry recipe / How to make Khaksi fry sabzi / Kantola fry recipe / Spiny gourd stir fry recipe
Kheksi or Spiny gourd is a very popular seasonal vegetable and also known as Kantola . Kheksi or Kantola belongs to bitter gourd family but it is not as bitter in taste at all.
Kheksi or Spiny gourd is seen in local vegetable market during monsoon only. Nowadays, we can easily get Kheksi in local markets or supermarkets.
In our family , we all love to eat Kheksi ki sabzi or Kheksi stir fry . We can serve Kheksi ki sabzi as a side dish with dal-rice and taste amazing.
Kheksi stir fry recipe is very easy and simple to cook. We only need five ingredients , Kheksi , oil , onion , green chillies and salt to make amazingly delicious stir fry.
Similar recipe are as follows :
Ingredients
- Kheksi or spiny gourd 250 grms.
- Mustard Oil 3 tbsp.
- Onion 1 medium chopped
- Green chillies 2 chopped
- Salt to taste
Method
Wash the Kheksi or spiny gourd 2-3 times in water . Drain and chop them lengthwise.
Heat mustard oil in a kadai or pan . Once oil is hot , add sliced onion . Mustard oil will give nice flavour and golden colour as well.
Sauté onion until it gets pink colour.
Add green chillies and sauté for few seconds.
Next goes Kheksi or spiny gourd . Add salt to taste and mix very well.
Cover the kadai or pan to let Kheksi get cooked on low flame.
Stir and sauté Kheksi after every five minute.
Once , Kheksi looks cooked , remove the lid and cook the sabzi without lid.
Keep stirring and flipping Kheksi slices on low flame so that they will get nice golden colour and crispness evenly.
The cooking process will take approximately 25-30 minutes on low heat.
We will sauté Kheksi slices until it gets crispy and nice golden colour.
Finally , Kheksi stir fry is ready to serve with dal-rice or plain parathas.
