Suran is also known as jimikand or elephant foot yam or yam . Jimikand is very healthy vegetable and rich with minerals , vitamins and dietary fiber. It has ritual purpose of eating suran sabzi on Diwali festival.

Jimikand or yam helps in maintaining digestive system functioning and promotes weight loss by reducing bad cholesterol.

Suran or Jimikand / Yam is available throughout year . So Jimikand sabzi / Yam curry is a nice change to regular veggies.


Here is the Jimikand curry / Yam curry recipe below.....


Ingredients 

  • Suran or Jimikand or Yam 11/2 cup chopped into big chunks
  • Yoghurt 2 tbsp
  • Lemon juice (used half of a lemon )
  • Oil (2-3 tbsp for shallow frying and another 2 tsbp for cooking)
  • Onion 1 small
  • Tomato 1 small
  • Ginger 1/2 inche and Garlic 4-5 cloves ( ginger garlic paste 1 tbsp)
  • Coriander powder 2 tsp
  • Garam masala 1 tsp
  • Turmeric powder 1 tsp
  • Red chilli powder 1/2 tsp or to taste
  • Salt to taste
  • Water as needed.
  • Cilantro or Dhaniya chopped

Method

  • Peel and cut the Yam / Suran into cubes. Before doing this , apply oil in your palm  . Wash Yam  pieces thorouhly.


  • Put these Yam pieces into boiling water and squeez half of a lemon into that water. Cook them until soft yet firm.



  • Remove Yam from water and keep it aside.

  • Make a paste of onion , tomato , ginger and garlic.

  • Heat 2-3 tbsp  oil in a pan or kadai and shallow fry all yam pieces till light brown.


  • Heat 2 tbsp oil in the same pan and add onion tomato ginger garlic paste . Cook masala paste for 1-2 min.



  • Add coriander powder , garam masala , turmeric powder and red chilli powder and mix well. Add little water so that masala will not get burn.


  • Cook this masala for another 1-2 min until it starts leaving oil.
  • Add yoghurt and mix well.

  • Next add yam into cooked masala and mix it very well.


  • Add 1/2 cup of water and salt to taste.Mix curry very well.


  • Let the curry cook for another 10-15 min on sim with the lid on. Stir it occationally so that curry does not get stick at bottom of pan.
  • Check if yam or suran is fully cooked. It means Yam or Suran curry is ready to serve.
  • Garnish with chopped cilantro or dhaniya.

  • Serve Yam / Suran Curry with hot chapatis or parathas.
