Gatte ki sabzi / Besan gatte ki sabzi / How to make Besan Gatte curry
Gatte ki sabzi or Besan gatte curry is a very popular and delicious curry. Here Gatte are referred to gram flour or chickpea flour boiled dumplings and later cooked with spicy gravy . Gatte ki sabzi or curry goes perfectly and taste awesome with roti or paratha or even plain rice.
There are many variation of making Besan gatte curry. Basically, authentic gatte ki sabzi is a yoghurt or curd based gravy . Here in this recipe , I am going to share my variation of gatte ki sabzi where we will prepare gravy with onion and tomato instead.
Recipe of Besan gatte ki curry is as follows :
Ingredients
For dumplings or gatte
- Gram flour or chickpea flour 1/2 cup
- Turmeric powder 1/4 tsp
- Red chilli powder 1/4 tsp or as per taste
- Oil 4 tbsp.(2 tbsp. for making dough and 2 tbsp. for shallow frying gatte)
- Salt approx. 1/3 tsp or as per taste
- Water approx. 1/4 cup or little less
For Gravy
- Oil 2 tbsp.
- Onion 1 medium
- Tomato 1 medium
- Ginger and garlic 1 inch and 4-5 cloves (or 1 tbsp. ginger-garlic paste)
- Coriander powder 2 tsp
- Garam masala 1 tsp
- Turmeric powder 1 tsp
- Red chilli powder 1 tsp or to taste
- Salt as per taste
- Cilantro leaves a handful chopped
- Water approx. 11/2 cup or as required
Method
Preparing gatte
Before start making gatte , heat 2 cups of water in a saucepan on medium heat.
In a bowl , add gram flour , turmeric powder, red chilli powder and salt to make gatte or dumplings.
Mix all the above dry ingredients together.
Add 2 tbsp. of oil and mix with gram flour mixture.
Next start kneading the dough by adding little water. We will add water little by little otherwise dough will become so soft and sticky. It took me approx. 1/4 cup or little less water to make a nice and soft dough.
At first gram flour dough may get sticky , so you can smear little oil in your hand.
Divide the dough into 3 equal parts. Roll them with your hand in cylindrical shape and keep them aside.
When water starts boiling , place these gatte into boiling water and allow them to cook on medium heat.
Once the gatte are cooked , they should float and little bubbles should appear on gatte as shown in pic.
Gently take them out and let them cool down . If you want , keep the remaining water aside in which gatte were cooked.
Once gatte are cooled down , cut them into round pieces and keep them aside.
Heat 2 tbsp. oil in a pan or kadai and shallow fry gatte for 4-5 min. on medium heat . This step will make gatte super soft and melt in mouth .
Remove gatte from pan and keep it aside.
Preparing gravy
In a grinder jar ,take roughly chopped onion , tomato , ginger and garlic. Grind it to a smooth paste.
If you are using ginger garlic paste , skip grinding ginger and garlic.
In the same pan where we shallow fried gatte, heat 2 tbsp. oil , add onion-tomato paste and ginger-garlic paste.
Sauté onion-tomato masala paste for few min. on low-medium heat .
Once the paste turns light brown and start leaving oil , add coriander powder, turmeric powder , garam masala and red chilli powder .
Add 2 tbsp. of water so that spices will not get burnt. Mix spices well.
Cook the spice along with onion- tomato paste for another 2 min.
when spice mix starts leaving oil , add approx. 11/2 cup of plain water or the remaining water that we kept earlier . Mix it very well.
Add salt as per taste and mix it again.
Let the gravy to cook on medium heat. Stir occasionally.
Once the gravy starts boiling , add all the gatte.
Mix gatte with gravy .
Allow the curry to simmer for 8 to 10 min.
If the curry seems little watery , it is fine because the curry thickens itself once cooled down.
Add a handful of chopped cilantro leaves and mix well.
Gatte ki sabzi or Besan gatte curry is ready to serve with roti or paratha or plain rice.
