Bhindi ki sabzi or Okra fry is very popular sabzi or curry in India. This sabzi is very simple and quick to cook. I often cook bhindi ki sabzi almost every week and my family loves to have it for lunch and dinner both. I mostly prefer to cook this sabzi for lunch to serve with dal , rice and rotis. Even This is perfect for lunch box packed with some parathas and reminds me my school days "Amazing".







Chopping bhindi and okra is little messy job. So before chopping okra ,we wash the okra in running water. After that pat the okra with clean kitchen towel to dry or if you have time , spread the bhindis under fan . They will get dry in fan in no time. Trim both the ends of okra and chop them in small pieces. Sometimes I cut the okra in 2 pieces and then chop them vertically in 4 pieces. So this is how we wash and chop okra. Now let us get to the recipe:


Ingrediends

  • 500gms Bhindi or Okra
  • 2 medium size onion
  • 2 green chillies
  • 2 tbs oil
  • 1 tsp garam masala (optional)
  • salt to taste

Method

Wash and chop the okra as mentioned above.



Chop the onions and slit the green chillies in two pieces vertically
Heat the oil in pan or kadhai.
Add the onion and saute it for a while.


Add green chillies .


Saute until onion gets translucent.

Add chopped okra.


Add salt to taste and mix it well.


Cover the pan for 5-10 mins.
Meanwhile, stir the sabzi so that it doesn't get burned.
You will see , okra starts getting tender.
Once the okra gets tender , remove the lid and cooke the sabzi without cover.
Cook this sabzi on low heat for another 10 mins or until okra gets cooked and nice color.

Here , Bhindi ki sabzi is ready.
