Sabudana Khichdi is very popular food or snack during fasting or vrat like Navaratri , Mahashivratri or Janmashtami.
Sabudana is also known as tapioca or sago in english. It is nearly pure carbohydrate and highly nutritious which gives energy throughout day during fasting . Addition of peanuts to sabudana khichdi add protein making it balanced meal.
This recipe is very simple and delicious. This may not look so appetizing but tastes amazing. I only use rock salt (sendha namak) and black pepper powder(Kali mirch powder) in my snacks during fasting.
Although,recipe is very easy, there is a trick in soaking sago or sabudana. Soaking sabudana is most important process in making sabudana khichdi because if you add excess water , it will become very very sticky (impossible to handle) and if you add less water ,they will become harder. So you need perfection in soaking that will come with experience and experiment.
Let's start the recipe.....
Ingredients
- Sabudana or sago or tapioca 1 cup
- Potato 1 big
- Peanuts 1/2 cup
- Desi ghee or clarified butter 1-2 tbs
- Black pepper powder 2 tsp
- Rock salt or sendha namak to taste
- Water for soaking 1/4 cup +1 tbs
Method
Rinse sabudana in water for about 4-5 times or until you get clean water and drain.
Soak the 1 cup of sabudana in approx. 1/4 cup+1 tbs water or the water level should touch the surface of sabudana for overnight or 5-6 hours.
After 6 hours or overnight soaking , you will get perfectly soft and fluffed sabudana. You will notice there will be no water in the bowl in which you soaked the sabudana.
Before starting any preparation , sprinkle about 1 tbs water over sabudana that keep the sabudana moistened and keep them aside.
Next, heat a pan or kadai and roast the peanuts until they become crisp and crunchy. Allow them to get cooled down.
Next , we will crush the peanuts. Before it , I usually remove the skin of peanuts by rubbing them between my palm.
Crush the peanuts either in mortar pastel or dry grinder. I use my dry grinder.
We need coarsely ground peanuts.
Chop the potato very thinly and small pieces
Now come to sabudana , add 1 tsp black pepper powder, crushed peanuts and rock salt to taste to soaked sabudana and mix them very well. Keep it aside.
Heat a pan or kadai, add ghee in pan.
After few seconds, add potatoes in ghee. Cover the pan and let them cook on low heat.
