Karela fry sabzi / Karela or Bittergourd sabzi / How to make Karela orBittergourd sabzi

Today, I am going to share the recipe of  karela fry sabzi. Karela is also known as bittergourd in english. As the name implies ,it tastes bitter yet it is packed with many nutrients especially for diabetes. Karela has blood cleansing properties as well. There are so many people who do not like bittergourd because of its bitter taste . But we can balance its bitter taste by adding onoin , tomatoes and even some people add jaggery too.


This karela sabzi recipe is very simple and you need only few ingredients which you always have in your kitchen. I cook this sabzi every week and goes with dal-rice or roti perfectly.





So let us start the recipe....

Ingredients

  • Karela or bittergourd 4-5
  • Onion 1 big
  • Tomatoes 1 medium
  • Turmeric powder 11\4 tsp
  • Red chilli powder 1 tsp
  • Salt to taste
  • Oil 3-4 tbs

Method

First , wash the karela in water. Scrape the skin of karela and cut them into round slices.

Take the karela slices in a bowl,  add 1 tsp salt and 1\4 tsp turmeric powder. Mix it very well. Cover the karela and keep it aside for 1-2 hour.
This process helps to reduce the bitterness of the karela and makes it soft.
After 1 hour wash karela slices very well.


Chop the onion and tomatoes .

Heat the oil in a pan or kadai, add onion and saute till translcuent.


Add chopped tomatoes into pan and cook the tomatoes until they are soft .


When tomatoes are cooked , add turmeric powder , red chilli powder and salt. 
Add Karela slices . Mix it well. 


Now, cover the pan and cook for about 15-20 min on low heat until they get nice color and crispy at edges,


Stir the karela occationally so that they will not get burned. Even you can drizzle 1 tbs of oil on karela while cooking.


Here , Karela or Bittergourd fry is ready to serve. Serve with dal-rice or simply with parathas ,it tastes awesome.
