Eggless Chocolate Brownies / How to make Eggless Chocolate Brownies

Today I am sharing a wonderful recipe that is Eggless Chocolate Brownies -Fudgy , gooey, chewy and not cake like. Personally I like this kind of brownies that I mentioned above (gooey and chewy). I have experimented so many variations of brownies with  different ingredients but never got perfect fudgy brownies. Finally I am sharing a fail proof recipe after so many experiments that makes perfect fudgy and gooey brownies.


I  adapted this recipe from food food cooking channel but made change to the proportion of ingredients according to the way I want my brownies to be fudgy, gooey, chewy and crinkle top.
In this recipe , you can use any type of nuts like walnuts, cashew nuts or hazelnut of  your choice to bring the crunch that compliments to your fudge brownie. My kid loves cashew nuts that's why I used cashew nuts on top.

Step by step recipe is as follows .

Ingredients

  1. Dark chocolate 1/2 cup chopped into small chunks
  2. Butter 50 gms. (used salted)
  3. All purpose flour 3/4 cup
  4. Baking powder 1/2 tsp
  5. Vanilla essence 1/2 tsp
  6.  Sugar 1/3 cup (or little less)
  7. Milk 1/2 cup 
  8. Salt 1/4 tsp required if using unsalted butter (optional)

Method

  •  For this recipe we want milk and butter at room temperature so take milk and butter out of refrigerator 1 hour before start making brownies.
  • Line a 8'' square pan with parchment paper and brush all over the pan with little bit oil or butter.

  •  Preheat oven to 180C/350F for 10 min.
  • For making batter , we will be using double boiler method.
  • Take a saucepan and a heat proof glass bowl bigger than saucepan so that  bowl can sit on saucepan easily.
  • Heat about 2 cups of water on medium heat. When water starts simmering , place a heatproof bowl over the saucepan . The water level should not be touching the bowl.
  • Add small chunks of dark chocolate to heatproof glass bowl .
  • Now start stirring the chocolate . When 60% of chocolate gets melted , add butter and keep stirring with a spatula until you get silky , smooth and shiny chocolate sauce.

  •  Take bowl off the saucepan .

  • Next add sugar vanilla. essence . Combine it together.

  • Now sift the dry ingredients flour and baking powder in the same bowl. Combine dry and wet ingredients with a spatula in cut and fold method . We will get dough kind of batter.

  • Add milk little by little and mix the batter with spatula in cut and fold method until we get smooth and lump free batter.


  • Pour the batter evenly in lined pan. Tap the pan gently to release air bubbles..

  • Top it with some chopped nuts of your choice. If you like plain fudgy chocolate brownies , skip this step.




  • Bake it in preheated oven for about 25-30 min.

  • After 25 min. check the brownies by inserting a toothpick . If toothpick comes out with few crumbs , brownies are perfectly baked.

  • Toothpick should not come with batter and if toothpick comes out clean that means brownies are over baked.

  • Take the pan  out of oven after 25-30 min. Let it completely cool down in pan on countertop.

  • Once brownie is cool down completely , lift the parchment paper and take the brownies out of pan.

  • Cut brownies into large or small pieces as desired.

  • Enjoy gooey and chewy eggless chocolate brownies .We can store these brownies for upto 3 days in refrigerator.
