How to preserve curry leaves / how to dry and store curry leaves / Storing kadi patta

Curry leaves are one of the most common herbs which we use in our daily cooking. It is commonly used as seasoning and adds special flavor to every dish. It's also known as kadi patta.
I hail from UP where most  dishes are made with the tadka of  onion , garlic or cumin seed. As far as I know my mom hardly use curry leaves.After marriage when I came to CG , I started adding curry leaves.
I learned preserving curry leaves when we moved to abroad where Indian grocery stores are either very less or miles away. So how many times one can make a trip to stores for curry leaves.
Here what I do to preserve curry leaves ......



Method

Wash the curry leaves with stems.

Put all the curry leaves on paper towel or cloth towel.
Wipe them dry so that they are not holding any water.
Remove the leaves from stems.


Spread all the curry leaves on a plate that can be fit in your refrigerator.

Refrigerate them for 5 to 6 day or until dried.
When they are dried , place them in a ziplock bag or an air tight container.
 Stock them in your pantry.
