Kaddu ki sabzi
Here again very simple and popular sabzi !!! Kaddu ki sabzi. Kaddu is also known as Kumhda,yellow squash or pumpkin. This recipe is very simple but delicious. This recipe does not need more ingredients. This sabzi taste awesome with pooris. In this recipe , I am going to add potatoes too. So you can say this is the recipe of Aloo kaddu ki sabzi !.
Ingredients
- 1/2 kg yellow squash or pumpkin
- 2 or 3 medium size potatoes
- 2 tbsp oil
- 1 pinch asafetida
- 1/2 tsp turmeric powder
- 1 tsp fenugreek seeds
- 1/2 cup finely chopped onion
- 1cup chopped tomatoes
- 2 green chillies
- 1/2 tbsp dry mango powder or amchur
- Salt to taste
- Cilantro for garnishing.
Method
Wash the pumpkin and potatoes . Peel and cut into pieces.
Heat the oil in a pan .
Add fenugreek seeds and asafetida .
After a while add onion and sautéed till golden.
Add green chillies . Here I am skipping it because my 2 1/2 yrs old kid doesn't like to eat chilly and spices. Usually I fry some green chillies in oil separately. My hubby loves fried green chillies.
Add tomatoes and cook them for 2 min or till mushy.
Add turmeric powder .
Next , add pumpkin and potatoes .
Add salt to taste and give it a good mix.
Add about 1 cup of water and cover the pan with lid.
Cook this for 10 to 15 mins or till they become soft.
Next ,add dry mango powder and give it a mix.
Again cook for 2 mins.
Now mash all the pumpkin pieces and leave potatoes as it is.
Stir the sabzi very well and cook for another 5 to 10 mins.
The consistency should be semisolid .
Garnish with finely chopped cilantro .
