Today I am going to share very simple vegetable brown rice pulao recipe. This recipe is one of my favourite recipes that I often cook for my hubby's lunch box. Vegetable brown rice pulao recipe is very simple and easy that you can cook in a jiffy.

This vegetable brown rice pulao recipe is melange of vegetables like beans , carrot , corn and peas cooked along with brown rice. Brown rice pulao is a perfect lunch or dinner recipe and goes perfectly with raita or pickles.


As we all know brown rice is usually considered much healthier than white rice. So It is good to incorporate brown rice in our daily diet instead.


Here is the vegetable brown rice pulao recipe below.

Ingredients

  • Brown rice 1/2 cup
  • Oil 1 tsp
  • Cumin seeds 1/2 tsp
  • Tomato 1 small 
  • Green chillies 2
  • Mixed vegetables of your choice (used carrot , beans, corn and peas) 1/2 cup
  • cilantro or coriander leaves finely chopped
  • Salt to taste
  • Water 1 cup

Method


  • Wash and clean brown rice well.


  •  Soak brown rice for 30-40 mins.

  • Drain the brown rice and keep it aside.
  • Wash and chop the vegetables of your choice.
  • Cut tomatoes and green chillies.
  • Heat 1 tsp oil in a pressure cooker.


  • Add cumin seeds and let it sizzle.

  • Add  chopped tomatoes and green chillies . Sauté for few seconds.
  •  Next , add chopped vegetables and sauté well.
  • Add brown rice to it and mix it very well.

  • Now add 1 cup of water ,add salt to taste and stir well.
  • Add finely chopped cilantro .
  • Cover the cooker and pressure cook it for 2-3 whistles on high heat. Then turn off the flame. Let the pressure go down itself of pressure cooker.
  • Open the cooker and stir the rice with a fork lightly. Vegetable brown rice pulao is ready to serve .
