Aloo gajar matar ki sabzi / potato peas and carrot curry recipe/ howtomake potato peas and carrot curry

Potato, peas and carrot dry curry is a very simple yet delicious dish . I have had this curry in my hostel mess for the first time. In Punjab, aloo gajar matar sabzi is very famous recipe and it's an everyday dish .


We had this curry with parathas and it tastes awesome. You can have potato peas and carrot curry with parathas or rotis or any flat bread. This curry can be a good side dish with dal-rice.




There are so many variation for this curry but mine is the simplest one . I don't use any spices that makes it easy to cook recipe.


In my family , everyone loves to eat potato and peas curry but every time you can't have potatoes and peas. By adding carrot , you can add some nutrition and taste to your simple potato-peas curry.

Let's start the recipe ...

Ingredients

  • Potatoes  2 medium
  • Carrot  4 medium
  • Peas 1/2 cup frozen or fresh
  • Onion 1/4 cup chopped
  • Green chillies 2 chopped
  • Oil 2 tbs
  • Turmeric powder 1/4 tsp
  • Salt to taste
  • Cilantro for garnishing
  • 1/4 cup water

Method

Wash , peel and chop the potatoes and carrots in cubes or chunks.


Heat oil in a pan or kadhai . Add onion and sauté till golden.






You can cook this curry in pressure cooker and even it takes lees time to cook but this curry tastes better if you cook in pan or kadhai.

Add green chillies and stir for few seconds.
Add turmeric powder and add potatoes , peas and carrots into pan.




Add salt to taste and mix it very well.

Add around 1/4 cup of water and cover the pan or kadhai with lid.


Cook these veggies for around 20-30 mins. And stir it occasionally .

When all the moisture is gone and potatoes and carrots are cooked fully , garnish with chopped cilantro.




Here , potato, peas and carrot curry is ready to eat.
