Method
Soak the chickpeas or kabuli chana for 6-8 hrs or overnight.
Cook the chickpeas in pressure cooker for 4-5 whistle in 3 cups of water and little salt.
In this recipe , I don't use onion, tomato, ginger , garlic grinded masala or paste.
Cut the cottage cheese or paneer into small chunks.
Heat the oil in a pan or kadhai , add ginger julienne and sauté for few seconds.
Add finely chopped onion and sauté till golden.
Add finely chopped tomato and cook till mushy.
Add all the dry spices and mix them together. Add little water so that spices will not get burnt.
Cook the spices until cooked spices start leaving the oil.
Add boiled chickpeas into the pan , add 11/2 cup of water and salt to taste. Give it a nice mix.
Cover the pan and cook the chickpeas in spices for 10 min on medium heat.
After 10 min when Chole starts boiling , mash some of the chickpeas with the help of spatula. This will help to make the gravy thicken.
Chole always taste good when its gravy is thick. Again cook for 5-10 min.
When gravy of the Chole starts thicken , add paneer chunks to Chole , stir it gently and cook for 5 min again. Garnish with finely chopped cilantro.
Here Paneer Chole is ready to serve with rice or parathas.
