Spicy stuffed okra / Bharwa bhindi / Roasted okra stuffed with spices

Stuffed okra or bharwa bhindi is very easy side dish recipe which can be ready in no time. So whenever you get bored of eating usual okra curry or sabzi , Stuffed okra is perfect for that change.


In this recipe , I used very ordinary spices and you can moderate it according to your preference . If want to add more heat , you can add more chilli powder or you can add less chilli powder.



Stuffed okra or Bharwa bhindi can be a perfect side dish with dal-rice and goes well with parathas or puris for breakfast . Bharwa bhindi is even perfect when traveling in summer too because it can stay upto 24hrs. without refrigeration.

Let's start the recipe..


Ingredients

  • Okra or bhindi 500gms.
  • Oil 3-4 tbs
  • Coriander powder / sabzi masala 3 tbs
  • Garam masala 2 tbs
  • Dry mango powder or amchur 1 tbs
  • Cumin powder or jeera powder 1 tsp
  • Turmeric powder 1 tsp
  • Salt to taste

Method

Rinse the okra or bhindi, pat them dry with a kitchen towel or paper towel and keep them aside.

Trim the top and tail of okra or bhindis  and slit them vertically but don't cut into two halves.

Take a small bowl , add all the spices and mix them together.




Add the salt to taste in spices. I added 11/2 tbs salt.

Take each bhindi and stuff it with 1 tbs of spice mix and keep it aside. Stuff all the bhindis with spices.



Heat the 3 tbs oil in a pan or kadhai , add all the stuffed okra and stir it gently. Cover the kadhai or pan and cook them for 5 min on low to medium heat.




After 5 min , stir it again and cook bhindis without covering. 



We have to do same after every 5 min on low heat so that okra will not get burnt. If you want , you can add little more salt while cooking.



When bhindis get fully cooked and nice dark green color, remove the pan from heat.



All this cooking process may take 20-30 mins.

Here , stuffed okra is ready to serve . You can eat this with parathas or puris.
