Pan Gojhwa / Masaledar chana dal Phare / Bengal gram dumplings smeared in spicy gravy


Hi friends, here I am with a delicious recipe called  Pan Gojhwa (पन गोझवा ) . In my hometown we
call it पन गोझवा . Pan Gojhwa  is one of my favorite local dishes. This Friday I cooked Pan Gojhwa and all credit goes to mom who told me the detailed recipe and cleared all my doubts while cooking over phone.  I don't know the details like where this dis come from and all but it is somewhere similar to Phare. So let us make Pan Gojhwa .





Ingredients

For Gojhwa
  • 2 cups Wheat flour
  • 1 cup Chana dal
  • 1/4 tsp red chilli powder
  • Salt to taste
  • Water for making dough
For gravy 
  • 2 medium size onion
  • 4 medium size tomatoes
  • 3 tbsp oil
  • 1/4 tsp red chilli powder
  • 2 tbsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • Salt to taste
  • Cilantro for garnishing

Method

Wash and clean chana dal.
Soak the chana dal for overnight.

Drain the dal and grind it until you get nice paste little bit coarse.

Keep the chana dal paste aside.
Make a wheat flour dough with the help of water. For making Gojhwa , we have to make a little bit hard dough just like we make for puris.

The dough should not be soft.
Cover the dough with a clean cloth and keep it aside.
Boil 4-5 cups of water in a bowl.
Now add little salt and red chilli powder in chana dal paste.
Next , make small loiyan or pede (ball ) out of dough.
Take a small ball or loyi and make a small puri but in a oval shape as shown in pic.

Take  one or two spoonful chana dal paste and place it on one side of that puri.
Apply little water on the edges and Fold over .
Make a shape of gujhiya and press the edges with finger so that filling will not come out.
Prepare these chana dal gujhiya.

When water starts boiling , place these gujhiyas in boiling water. 
Let them cook for 10 min. Flip them over while cooking.
After few mins they starts hardening.

When they become firm, drain them and place on a plate.

Let the gujhiyas cool Down.
Once they are cooled , cut them pieces as shown pic and keep them aside.

Chop the onion and tomatoes in big chunks .
Grind them in a fine paste.
Heat oil in pan.
Add onion and tomato paste and sauté until it's raw smell is gone.

After 5 mins add coriander powder, turmeric powder, chilli powder and garam masala.
Add little water so that masala will  not get burn.

Add salt to taste. But remember we have already add salt to chana dal paste.
Cook the masala for about 5 min.
When masala starts leaving oil , add these chana dal gujhiya pieces.

Give a good mix so that every piece should be covered with masala or gravy.
Sprinkle some water .
Cover the pan and cook it for 10 min.
When all the excess water is absorbed , remove the pan from heat.

Garnish with finely chopped cilantro or dhaniya.

Serve as a side dish or starter or snacks.
