Raswali Bhindi sabji / Bhindi curry / Bhindi ki raswali sabji / How to make curried Okra/ UP style Raswali Bhindi ki sabzi



Hi friends, Here I am with another delicious recipe of Bhindi or Okra called Raswali Bhindi Sabzi. Actually I got bored of having fried bhindi and dahiwali khatti bhindi .So  I thought to try something new. Actually this Curried Okra is not new to me , I had this curry lots of time before marriage . This is my mom's recipe and she cook very often this curry at home. But I didn't cook this Okra curry before this. Here Mr. hubby and my FIL never tasted this Okra curry before.

So this friday I cooked Curried Okra and everyone liked that. Even Mr. Hubby said "Awesome". He liked this sabzi a lot.
Mostly pepole cook either fried okra or bhindi kadhi and nerver cook okra curry because of its stickiness. But try this recipe , you will never get stickiness in your okra curry and It would become another good option with bhindi.


This recipe is very simple and easy . You need very ordinary spices to cook this Raswali bhindi sabzi. For me this sabzi is perfect for dinner and goes well with rice , roti or paratha. Personally , I love to have this with parathas.
So Let us start this recipe:

Ingredients

  • 250gms. Bhindi or Okra
  • 3 tbs oil
  • 1/4 tsp methidana or fenugreek seeds
  • 1 big onion
  • 2 medium size tomatoes
  • 1/2 inch ginger
  • 2 big cloves of garlic
  • 2 tbs coriander powder
  • 1 tbs garam masala
  • 1/4 tsp turmeric powder or haldi
  • 1/4 tsp chilli powder
  • salt to taste
  • cilantro or dhaniya for garnishing

Method

Wash the bhindi or okra in running water.

trim head and tail of bhindi and cut them in two pieces  as shown in picture.

Chop the onion and tomatoes in big chunks.
Peel ginger and garlic.

Grind onion , tomatoes, ginger and garlic together in a smooth paste.
Heat the oil in a pan or kadhai and add the pieces of okra.

Saute them until they get soft and golden.
Transfer the fried okra on a separate plate.

In same pan with leftover oil , add methidana or fenugreek seeds.
Actually I forgot to click while adding fenugreek seeds.
After few seconds, add onion , tomato, ginger and garlic paste.
Saute this paste until it's raw smell is gone.

Ater 2 min , add coriander powder, garam masala, turmeric powder and chilli powder.
Add very little water and cook the masala until it starts leaving the sides of pan.


After 5 min , add fried bhindi or okra and fold it with masala.


Add salt to taste and mix it well.
Add around 1 or 11/2 cup of water , mix it and cover the pan.


Cook this until starts boiling.
Add finely chopped cilantro and mix well.
Cook for another 5-10 mins.
Here your Okra curry is ready.



Serve with hot rice and dal or parathas.
