Cluster beans curry / Guar ki sabzi / How to make Cluster beans curry/ Guar falli ki sabzi / Chattisgarhi Chutchutiya ki sabzi
Hi friends , Today I am here with a recipe of cluster beans curry. Cluster beans are known as Guar or Guar falli in hindi and Chutchutiya in chattisgarhi. Cluster beans are very healthy as well as low in calorie so you can include this in your meal.
I usually cook Guar sabzi in weekends beacuse cleaning and chopping cluster beans take time and sometime this chopping process discourage me to cook this amazing cluster beans curry. My hubby loves the way I cook this curry.It is my mom's recipe. Before marriage , whenever my mom cooked this sabzi for dinner , I loved to have leftover sabzi with parathas and a cup of tea in morning.
Guar is consumed in almost all states of India and people have their own way to cook this. Here I am going to cook guar sabzi in UP style where generally people make a masala by making a smooth paste of onion , ginger and garlic and use this masala in curry. This method brings a unique flavor to curry.
Let's get to the recipe:
Ingredients
- 500gms cluster beans or guar falli
- 3 tbs oil
- 1 big onion
- 2-3 cloves of garlic
- 1 inch ginger
- 3 tbs coriander powder
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1/4 tsp chilli powder
- salt to taste
Method
Remove the srings on both sides of each beans as shown in pics.
Chop the beans in 2 or 3 pieces.
Peel the onion ,ginger and garlic.
Chop them in big pieces and grind them in a smooth paste.
Heat the oil a pan .
Add onion, ginger, garlic masala to oil.
Saute and cook it until the water and rawness in masala is gone
Once the masala is dry, add coriander powder , garam masala, chilli powder and turmeric powder.
Add little water so that masala will not get burned.
Once the masala is cooked and leaves the sides of pan , add chopped cluster beans or guar.
Add salt to taste and mix it very well.
Add about 1 cup of water and put the lid on.
Let it cook of 10 -15 min or until cluster beans get tender and all the water is absorbed.
After 15 to 20 min , cook this curry without lid and saute it until the whole curry start leaving the edges of pan.
Here cluster beans curry is ready.
Serve with hot dal-rice or rotis -parathas.
