Indian style Pasta / Veggie Pasta with Indian Spices / Desi style Pasta


Hi , Here I am with a recipe of Desi style Pasta which is perfect for brunch or lunch box.  This recipe belongs to my younger brother . He loves to cook Chinese and Italian food . Last winters , when I went my mom's home, he made these Desi style pasta with penne for brunch. Before eating , I was making fun of him when he was adding spices and tomato chunks. When I ate those pasta , they were amazing literally . I gobbled up all in no time. 



Last Saturday I cooked Desi style pasta,  Mr. Hubby loved it and my kid gave me a Hi-five after eating pasta. So I thought to share this awesome recipe with you all. This recipe is very quick so perfect for lunch box.

Ingredients

  • 1 cup pasta as per your choice
  • 2 tbsp Oil
  • 2 small carrot
  • 4-5 beans
  • 1 onion
  • 3 tomatoes
  • 2 chillies
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • Salt to taste
  • Cilantro  for garnishing optional 

Method

Boil 5-6 cups of water and add 1/2 tsp salt to it.



When water comes to boil , add pasta and cook pasta till Al Dente or as per instructions given on packet. When you eat pasta it has bite.
Here I am using elbow pasta or macaroni. You can use any variety of pasta. If you use bow tie pasta , they looks more presentable.
Chop the onion , tomatoes and chillies.
Chop the carrot and beans diagonally .
While pasta is cooking, heat the oil in a pan .



Add  carrots first because crrots take longer time to cook.

Add beans and after 2 min add onions.



Sauté these veggies on low heat until they cook and onion gets translucent.
We want to cook veggies but not to ruin their color.
Add tomatoes and cook for 1 min.

After 10 min, take the pasta off the heat. 
Drain the pasta in a colander. 
Add chillies and sauté little bit.
Add coriander powder and turmeric .
Add little water so that masala will not get burned.
Here I have one more trick which can make your pasta more delicious .
You can use Maggie masala magic here.
Just add one packet Maggie masala magic.
Add litle salt to veggies and masala .
Do remember you have already added salt to pasta while boiling.
Add drained pasta to veggies.

Mix it very gently .
Add tomato ketchup to the pasta.

Again mix it well .


You can cover the pan just for 2 min .
 Garnish with finely chopped cilantro.
Here Indian style pasta is ready.
